Nutritional labeling is a cardinal task in today’s food industry, due to the stringent laws of government and FSSAI on food manufacturers. What are FAME and FAEE?

FAME(Fatty acid Methyl Ester) and FAEE (Fatty acid Ethyl Ester) are derived by the transesterification of fats with alcohol.

Sources of FAME and FAEE are vegetable oils, animal fat or waste cooking oil.

FAME ANALYSIS TECHNIQUE- A specified method for determining the total fat content in a food product. Once the total FAME is quantified in the derivatized sample, the total amount of fat in the form of triglycerides is calculated, based on the initial sample weight.

FAME analysis is considered to be a key tool for both characterizations of fats and oils and quantification of the total fat content in foods.

    FAME characteristics and importance :

    The physical characteristics of fatty acid esters are closer to those of fossil diesel fuels than pure vegetable oils, but properties depend on the type of vegetable oil.

  • A mixture of different fatty acid methyl esters is commonly referred to as Biodiesel.
  • FAME has physical properties similar to those of conventional diesel.
  • It is also non-toxic and biodegradable.
  • Ethanol-diesel blend, also known as e-diesel, is obtained by mixing bioethanol with traditional diesel oil. Compared with regular diesel fuel, e-diesel can significantly reduce the emissions of particles and other contaminants, and improve cold start-up properties.

Analysis Techniques

FAME/FAEE are most suitable for separation by gas chromatography (GC). Fatty acid methyl esters increase volatility, expands peak symmetry, and reduces sample activity, accordingly provides more accurate analytical data.
